Sushi One reopens after devastating fire

Sushi One is open from 11 a.m.- 3 p.m. and 5-9 p.m. Sunday through Thursday; 11 a.m.- 3 p.m. and 5-10 p.m. on Fridays, and 11 a.m. to 10 p.m. on Saturdays.

The popular Sushi One restaurant is now open eight months after a fire devastated the building and closed the restaurant in the Market Square center in west Greeley.
A fire gutted the inside of the restaurant at 3820 10th St., after an overnight fire last February. The blaze started from a makeshift splash guard made out of cardboard and covered in aluminum foil that was thrown into the garbage.
Owner Tae Suh opened the restaurant two weeks ago to eager lunch-goers waiting in line.
"It looks like everyone was waiting for the last eight months and we've been really busy," Suh said. "It's getting a little slower, but we're busy. I'm really happy. I really appreciate the customers. Everyone is so nice."
Suh said once the insurance money came in, he was able to pay his employees, all of whom returned to work at the restaurant.
It's the second time he's had to re-open the restaurant in his seven-year history in Greeley. In 2009, he had to shut the doors for three months due to some water damage.
This time, however, eight months was almost infuriating. There was the waiting for the insurance money and then waiting on the general contractor to rebuild.
"We had to wait a lot. ... It was really slow. ... But it ended up nice," Suh said.
Suh said he changed the restaurant from the inside out, from its look to its offerings.
"We changed the whole thing, everything is brand new, the outside windows, doors, floors. Everything. We totally changed everything. We changed the menu too. It's similar to the menu we used to have, but we have a lot of new things."
